Compensation: 18 per hour plus tips

The chef's assistant position is volume based and flexible. We offer a guaranteed minimum of 6 hours per week (averaging 8) when open. Only Cannoli closes the month of January, major holidays, and for the occasional vacation. This position has a focus on production with the ability to pick up event hours when they are available. We offer in-depth training in a fun, open communicative work environment with flexible scheduling.

Overview of Production:
The production cook produces cannoli shells and fillings working side by side with the owner.
This position includes:

● Mixing cannoli dough in 20 quart mixer
● Cannoli shell & cannoli chip rolling using a pasta rolling machine
● Frying cannoli shell and chips using a commercial fryer.
● Mixing cannoli cream using 20 quart mixer and heat sealing tool
● Cooking custom fillings using a 10 quart pot and on commercial range.
● Detailed cleaning of production kitchen

Overview of Events:
Larger events call for more hands at the table. We fill cannoli “to order” to ensure guests receive the freshest possible quality. We offer pre-determined menus and diy options.
This position is customer facing in a fast paced environment.
This includes:

● Filling cannoli shells with guests desired filling
● Adding toppings to filled cannoli
● Working in a fast paced environment
● Customer Service
● Ability to use register with training

For example of the event flow-
1. The guest will approach our table and ask for a cannoli with ricotta filling
2. Employee (1) will pass the filled cannoli to employee (2) where they'll ask the guest what toppings they would like
3. After employee (2) dips in desired toppings, they will pass the cannoli to employee (3)
4. Employee (3) will accept payment via a square reader.

It's a simple process that happens very quickly, at most about once per minute.

About us:
I am Sarah, Chef/Owner of Only Cannoli located in Richmond, Vermont.Only Cannoli is a focused effort of over a decade of pastry chef experience. I started this business in May 2022 out of my home in
Winooski with a countertop fryer and a 6 foot table. In 8 months we have grown exponentially, sharing a commercial kitchen with Vermont Fine and working with well respected Vermont brands such as
Switchback, Mad River Distillers, Ben and Jerrys, and Vermont Italian Cultural Association. In January
2023 we brought in Jordan McCann as our business partner and investor.
We currently produce on Mondays in our shared kitchen space and travel to events throughout the
Chittenden County area such as Pride, Art Hop, ONE Ramble, and smaller events at taprooms, bars, and restaurants. In February 2023 we will officially launch wholesale serving all of Vermont.
Our management style is respectful, transparent, communicative, fun and hardworking. We have expectations of the same from our employees. We are a new business with evolving challenges. These challenges give us an opportunity to create new systems together and build a stronger team.

Pay: $18.00 per hour
