JOB SUMMARY:
The Fish Monger is responsible for storage, display, sale and transport to and from the kitchen of all products on
display at the Market station

ESSENTIAL JOB FUNCTIONS:

• Highly knowledgeable about seafood (provenance, preparedness temperature, texture, approximate

fat content), seafood selection and proper cooking techniques

• Perform preliminary preparation work in a timely manner.
• Ensures ingredient supply levels are accurate.
• Acknowledge customer immediately with a smile.
• Inform guests of any specials and have a full understanding the menu to answer any questions.
• Maintain knowledge and understanding of all menus to answer any guest questions
• Ensure food order is correct before transporting to the kitchen.
• Move items from shelves to carts and transport to display.
• Maintains the required par of food items in their assigned station from support areas throughout the

property.

• Maintains a sanitary and organized work area.
• Understand proper safety and health codes and regulations and maintain them regularly.
• Ensure all areas assigned are clean and free of debris.
• Demonstrates proper care, storage, use and cleaning of all tools and equipment.
• Follows proper zoning procedures, returning/ storing product and equipment to designated areas.
• Demonstrates competent product knowledge by correct storing and handling of all perishables,

maintaining quality, security, value and integrity.

• Prepares food products according to standard recipes and specifications and demonstrates positive

responses to training by chefs.

• Effectively communicates with other team members, including service and kitchen maintenance

personnel, chefs and managers.

• Verbally acknowledges instructions, responds in a professional manner.
• Assist with any other job-related duties that may be assigned.

PERFORMANCE REQUIREMENTS: (knowledge, skills, and abilities)

• Extensive Knowledge of food and beverage products.
• Ability to perform basic/intermediate math skills.
• Ability to operate point of sales systems.
• Ability to read, write, and understand English.
• Ability to communicate effectively and establish and maintain effective working relationships

with guests, staff and management.

• Knowledge, understanding and compliance of policies and procedures, job descriptions, daily

memorandums, chemical labels and other instructions.

PHYSICAL, MENTAL AND ENVIRONMENTAL DEMANDS:

• Ability to work from a standing position for extended periods of time.
• Ability to perform reaching, twisting and stooping motions repeatedly.
• Fast paced, high volume environment involving constant public.

JOB DESCRIPTION

• Requires ability to containers of ice.
• Ability to carry plates without a tray.
• Requires standing, walking, and lifting a minimum of 50lbs repeatedly.
• Shifts may vary based on business needs.
• Must be able to handle intoxicated guests in a professional manner.
