Our generous benefits package increases the total compensation of a full-time (benefits eligible) Food Service Operations Manager making $26.33/hour to an estimated $38.00/hour.

Any applicant offered employment in this position at the Idaho Department of Health and Welfare will be required to complete a criminal history background investigation. Employment is dependent upon satisfactory results of the investigation.

Example of Duties

  • Confers with cooks in charge of preparing meals to ensure adequate amounts of food is on hand to produce planned menus.
  • Maintains inventory of all food and supplies ordered.
  • Writes, tests, and adopts new and standardized recipes.
  • Plans menus bi-annually for RD approval.
  • Develops methods for using leftovers and eliminating waste.
  • Checks trays, food containers, and plates for appearance and accuracy of servings.
  • Ensures proper portioning and meal delivery to satellite facilities.
  • Ensures special diet plans are followed.
  • Tastes food for flavor and tests for proper temperature.
  • Prepares menu items and serves meals during absence of kitchen personnel.
  • May prepare food for special diets and modified textures.
  • Trains staff in food service methods meeting institution regulations and policies.
  • Coordinates activities of preparation area with serving units and schedules.
  • Ensures the efficient and operational effectiveness of the facility food service operation and develop and implement emergency feeding plans.
  • Manages the food service department budget.
  • Plans work schedule for members of dietary unit; interviews and hires cooks and food service workers and evaluates their performance and adherence to food service standards.
  • Schedules cleaning assignments to maintain desired level of cleanliness.
  • Prepares purchase specifications for food and kitchen equipment.
  • Inspect utensils, equipment, and facilities for compliance with sanitation and safety standards and regulations.
  • Recommends replacing work utensils and equipment; conducts safety and sanitation training.
  • Ensures that state and federal health, safety, sanitation, and security regulations are followed.
  • Assists with the devolvement of procedures for kitchen operations in accordance with state and federal laws, rules, and department policies and directives.
  • Works closely with other departments in the hospital to coordinate efficient, effective, and cooperative communication and operational flow.

Minimum Qualifications

  • Some knowledge of principles of nutrition.
  • Some knowledge of management practices.
  • Some knowledge of sanitation and safe food handling practices of an institutional food service operation.
  • Experience preparing and serving large volumes of food in an institution or facility.
  • Experience using a computer to generate reports.
