- Using a hand knife, make an incision into each achilles tendon, creating a hole.
- Hook the gambreller into the hole made at the achilles tendon
- Guide the gambreller as the carcasses is taken away
- Turn and direct each carcass during the take away and ensure all toenails have been removed. Remove toenails using a non-powered hand tool.
