Serves as a system-wide expert within Nutrition Services to develop, implement and lead food production and culinary operations/processes in collaboration with site Nutrition Services leadership. Reporting directly to the Vice President of EVS, NS, and Hospitality, this role is responsible for strategic culinary direction and leadership for Corewell Health System
Responsibilities to include:
  • Develops and implements plans to standardize/streamline food production service policies, procedures and practices across the system, which includes recipes, inventory and purchasing/equipment. Implements and evaluates the creation of standard recipes for patients, retail, and catering to drive growth and patient and guest satisfaction. Responsible for menu planning, pre-costing and post-costing
  • Works directly with the System Vice President of EVS, NS & Hospitality and the Supply Chain Category Manager and Sourcing Specialists to drive cost savings opportunities in conjunction with vendors and system logistics leadership. Assist with the purchasing of inventory and capital equipment throughout the system in conjunction with site food and system logistics leadership
  • Serves as the primary system-wide expert and resource on food production quality and best practices. Works with the CBORD team with development and implementation of a system-wide food inventory system.
  • Manages and controls resources and materials to ensure quality, adequacy of supply and cost control within budgetary guidelines. Delivers strong operational performance and ensures regulatory agency standards and guidelines are adhered to. Ensures compliance to food safety, sanitation, and overall workplace safety standards through system audits and executes improvement plans.
  • Creates and implements system-wide policies and procedures for patient services and best practices for tray delivery that creates the highest level of patient/resident satisfaction. Monitors operational quality and develops necessary action plans to provide optimal nutrition care and meal service to patients/residents. Drives patient satisfaction and maintains relationships through rounding, rigorous quality assurance and accuracy controls
  • Creates system-wide tools to train food production staff on food production, presentation, quality, cost control, safety and sanitation. Identifies and executes best practices for floor stock, patient meal cost, productivity, and profit and loss related to patient services to improve services and processes. Creates best practice for menu distribution and other menu issues, and facilitates operations related to production, distribution, and service to ensure optimal Nutrional care of patients
Basic Qualifications:
Associate's Degree or equivalent education, training and experience in food service or culinary arts
3 years of relevant management or supervisory experience REQUIRED
5 years of relevant culinary experience along with healthcare experience PREFERRED
Licensure/Certifications
CRT-Dietary Manager, Certified (CDM) - CBDM - 1.5 yrs Required
CRT - ServSafe Manager - NRA. Upon Hire Preferred
