Kitchen Buffet Manager

Pali Mountain is looking for a kitchen manger to produce quality buffets for our guest, regularly serving 700 individuals, with the majority of our customers being children. The right person has worked their way up in the kitchen and is passionate about serving quality meals that our customers enjoy. Experience as a cook, managing a staff of 20+ employees, and maintaining a budget are requirements to be considered for this position.

Pali Mountain's 250-acre alpine site is nestled in the heart of the San Bernardino mountains, 90 minutes from most of Southern California, we operate year-round running outdoor education programs and conference events during the school year and residential summer camp from June-August.

Summary

The Kitchen Manager's responsibility is to provide a smooth-running kitchen that serves high quality, tasty cuisine, on time, on budget in a friendly and professional manner.

Pali Mountain has 3 business units, a summer camp, an outdoor school, and a conference center.

Meals are produced out of our circa 2015, 27,000 sq ft dining hall, which has one of the largest commercial kitchens in Southern California boasting state of the art equipment and 5,500 sq ft of working space.

Meal budgets, depending on customer ranges from $4.37 to $7.68 all inclusive.

Kitchen Manager Duties and Responsibilities, including but not limited to the following:

  • Produce quality buffets.
  • Ensure the kitchen is clean, organized and in spotless condition.
  • Cook and oversee other cooks.
  • Schedule, hire, train, discipline and terminate food & beverage team of 20+ members as needed.
  • Maintain a minimum customer quality score and consistently strive to improve customer experience.
  • Order food with multiple vendors.
  • Oversee the monitoring of food and liquor inventory levels.
  • Order kitchen equipment and supplies.
  • Manage the room service delivery program.
  • Maintain budget.
  • Oversee menu design including weekly rotations, and seasonal changes.
  • Adjust menu to accommodate guests with specific dietary concerns.

Education:

  • Associates or bachelor's degree in Hotel Management, Restaurant Management, or Business.

Required Experience:

  • 2-3 years supervisory experience in food service.
  • 2-3 years cooking experience, preferably buffet style restaurant.

Salary and Benefits

  • $75,000-$90,000 annually DOE plus bonus.
  • 2 weeks paid vacation.
