Smokehouse Operator Job at Parallel Employment
The Thermoprocessor B will work in the smokehouse and cook product in accordance to the specifications.
- Verify that supplies are prepared for the cook process.
- Operate cook tanks to prepare materials.
- Move full racks and nestainers out of the kitchen and into the smokehouse.
- Smoke, cook, and shower sausage using the production memo/cycle sheet.
- Input setting onto control panel based on cycle sheet instructions.
- Ensure that generators are working and load them with saw dust throughout the cook cycle.
- Inspect product to ensure proper cook.
- After cooking product, if required, push finished product into the cooler for stabilization.
- 3rd shift Thermoprocessors will be responsible for stabilization processes as well. These responsibilities include monitoring cooling temperatures, setting up temperature monitoring probes and staging products for packaging operation.
- In between work processes inspect the house for cleanliness and if needed follow sanitation process.
- Monitor and Verify finish cook temperatures for the U.S.D.A. HACCP/Food Safety Plans Critical Limits and ensure compliance with operation guidelines (Appendix A).
- Other duties as assigned.
While performing the duties of this job, the employee is frequently required to stand, walk, talk and hear, and use hands to finger, handle, or touch objects, tools, or controls. The employee must occasionally lift and/or move up to 50 lbs and push/pull up to 50 lbs while moving product and/or packaging. Specific vision abilities required by this job include far and near vision and the ability to see color. Depth perception is required to move around departments and supplies. The employee must be able to hear The mental and physical requirements described here are representative of those that must be met by an individual to successfully perform the essential functions of this position.

Education: High School Diploma or equivalent
Experience and/or Training:
- Ability to write, read and comprehend instructions
- Detail-orientated
Licenses/Certificates: 1 year of HACCP
Technology/Equipment: Familiarity operating a computer
