Summary

Manages concessions operations in the facility by performing the following duties.

Essential Duties and Responsibilities

• Event PlanningWorks with Catering Sales Manager and Clients to identify number and locations of concession food services

Works with facility electrical power provider to ensure timely installation
Works with internal and subcontractor teams to ensure delivery of concession services
Ensures correct menus & prices are programmed into PoS systems and communicated to guests

• Execution, using either direct employees or subcontractorsPreparation and service of food and refreshments, as well as clean-up

Assists in the training of concessions employees engaged in the preparing and cooking foods to ensure high quality, efficient and profitable food service.
Purchases refreshments, according to anticipated demand and familiarity with public taste in food and beverages.
Directs storage, preparation, and serving of refreshments by other workers at refreshment stand.
Assigns concessions workers to locations.

• ReportingTabulates daily, and per show sales receipts, and stock levels.

Reports said to Finance department to ensure prompt payment to sub-contractors

• Works within guidelines for food and labor costs.
• Works with Executive Chef
• Other duties as required

Supervisory Responsibilities

• Directly supervises all employees in concessions. Carries out supervisory responsibilities in accordance with ASM Global’s policies and applicable laws. Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding; disciplining employees in conjunction with Human Resources; addressing complaints and resolving problems.

Education and/or Experience

• Bachelor's Degree (BA) from four-year college or university
• +2 years related experience and/or training
• Or equivalent combination of education and experience
• Previous management experience in a similar venue

Skills and Abilities

• Demonstrated ability to control costs, generate increased revenue and manage accounts payable/receivable and financial reporting
• Strong written, verbal and interpersonal skills.
• Ability to function in a fast-paced, team-oriented environment
• Ability to train workers in preparation and cooking of foods to ensure high quality, efficient and profitable food service.
• Ability to manage several direct reports
• Knowledge of computers.
• Bilingual in Spanish is a plus

• Monday to Friday
• Weekend availability
