THE COASTAL GOURMET GROUP is seeking a talented Executive Banquet Chef to join our team! This is a full time position at Coastal Gourmet and we are looking for a hardworking, people friendly and self-motivated individual with a minimum of 5 years of kitchen experience.

A “hands-on” working chef, with culinary abilities that encompass gourmet banquet production styles of cookery. Ability to supervise, train, motivates and educates supporting culinary personnel. The Ex. Banquet Chef is required to ensure the successfully execution of all special events at the highest level of culinary excellence.

· Works under the directions of the Sr. Vice President

· Maintains the highest professional standards and demonstrates excellent leadership behavior

· Experience in leading a team by example to execute the culinary production of multiple large volume, high-end wedding’s and corporate events.

· Experience in menu development utilizing innovative culinary trends

· Must be a motivator and educator as to maintain a team of dedicated culinary professionals

· Controls food costs through careful, consistent review of production records and through establishing and following product storage requirements, standardized recipes, waste control and ordering procedures.

· Estimates food consumption and requisitions or purchases food

· Controls labor cost though proper training and scheduling

· Schedules are posted 2 weeks prior, adjusting to projected sales

· Develops and plans new production menus, keeps to required timelines

· Develops recipes and creates a standard which is consistent in quality at all times

· Maintains and updates recipes book with photos and keeps accessible to staff

· Provides culinary instruction and/or demonstrate culinary techniques.

· Provides proper safety instruction and hands on training for culinary staff at all times.

· Hold culinary staff accountable and follows disciplinary protocol.

· Responsible for compliance with all environmental and Board of Health sanitation standards

· Maintains the highest level of sanitation and food storage

· Strong interpersonal and communication skills Communicates on a daily basis with all management

· Computer skills to include Office, E-mail and internet

COMPETITIVE PAY $70,000.00-$80,000 per year plus Medical, Dental & Vision , Vacation
