Kokomo Trading Co is looking for an experienced crew who are talented, outgoing with a love for people, great food, great drinks music and a desire to work in an immersive and warm environment that feels like an escape to your favorite beach.

We are looking for Shift Managers

Maintain operations of a full-service restaurant with efficiency & consistency. Duties include good fellow management relations, staff supervision, public relations, record keeping, reconciliation, inventory control & supervising food preparation. Responsibilities also include troubleshooting any situation that may arise & determine what needs to be accomplished & performed in a prompt, efficient, cost-effective manner.

Management Activities

A. Front of House:

1. POS System

-Voids, comps, discounts

-Drawer changes – server & cashier check outs

-Print reports

2. Employee Supervision

-Assign job duties (stations for servers)

-Train- on going process

-Spot check tables- for discrepancies

-review guest checks, emp meal checks & friends of servers checks

-Encourage team building

-Sales contests, Helping each other

-Performing job description

-Dress code, Hair / makeup/ jewelry

3. Customer Satisfaction

-Customer interaction

-Repeat customer knowledge
-names / table preferences/ food likes

-New customer awareness

-menu clarification

-Proper music at proper level for time of day – adjust frequently

B. Back of House:

1. Employee supervision and team building

2. Cooks and prep-cooks- performing job description

-Dress code & hygiene controls

-Sanitation policies followed

-Quality controls

-Inventory controls (food) i.e., meats & (beer if applies)

- Portion & presentation as set forth by menu standards

3. Busboy & dishwashers- performing job description

- Dress code & hygiene controls

-Quality controls

-Proper cleanliness of stations as assigned for daily activities

-Inventory controls (supplies) i.e., Silverware & trash

4. Oversee proper lifting using legs, not their backs!

5. Review the orders carefully – do not sign unless everything on order sheet is there and what was ordered

C. Restaurant Appearance – clean & presentable:

Maintain the following throughout the shift…. every ½ hour as needed.

1. Sidewalk & planter boxes

2. Perimeter of restaurant

3. Entrance / doors – glass clean

4. Windows, walls, ledges, & floors

5. Table tops booths & chairs

6. Kitchen

7. Trash & back entrance

D. Restaurant Maintenance:

1. Equipment functioning properly

2. Heaters & air conditioning & lights on / off...conserve!!

3. Safety issues

-Water spills, Food handling, deliveries

4. Security issues

- Locked areas secured

-Safe/coin drawer, Wine storage (if applies), T-shirt cabinet

E. Special Functions:

1. To go deliveries

-Stay organized & be consistent

2. Community functions

-Review and prepare for community functions that might affect the restaurant

3. Holidays – review from year before – always!!!

-be aware of any holiday and any promotional activities

4. Room Service (HB Only) check all orders PERFECTLY!!!

F. Staff Activities: Front & Back of House- motivate & coach staff

1. On time & doing what is expected

2. All shifts filled

-Handling situations that might arise due to illnesses, injuries or no shows

3. Coordinate tasks & then supervise

4. Workman Comp – call Carolyn ASAP (then Cris if no answer)

-All injuries in restaurant should be handled with utmost importance depending on seriousness on injury

-All paperwork (restaurant & employees) filled out completely in a timely manner

5. Handling the positive & the areas of improvement

-Praise in public, critique in private

-When critiquing handle in a discrete serious one on one professional manner

G. Clerical: Awareness of all files & forms that directly affect job performance.

Update, replace, add to or copy as needed.

1. Forms / files include:

-Employee files

-Ordering forms

- Signer’s sheet updated

-All management journals

-Checklists, Training guides, Daily journals, Supplies needed

Repairs form, food needed, Food borrowed, Employee File Book

-Invoices from purveyors

-Stored in proper place

H. Financial Activities:

Cash Procedures - Oversee operation of cash register daily

1. Verify coin drawer front & back twice daily on shift

2. Verify cash drawer upon arrival at restaurant

3. Cash drops

-Frequent storage of larger bills ($20 & above) to coin drawer

- Handle cash in a safe and cautious manner

4. Deposits

-Change drawer at specific time

-Verify at $150.00

-Verify sales – cash & credit

-Fill out daily cash sheet

-Fill out deposit slip

-Enter in check book

-Bank if necessary (stock coin drawer)

I. Marketing & Sales Activities:

Promote from within

1. Loyalty cards

2. Table tents

-on tables

3. Good Stuff wear

-T-shirts, hats, etc…

4. Sales contests

-Servers, Hosts

5. Daily specials

-be creative, use products we have

-inspect special boards – VERY IMPORTANT

-Proper prices & descriptions

-Write new products and promotions at the bottom of the boards

-Staff informed & prepared

J. Control Activities:

Quality control

1. Spot check food items - daily

-Soups, sauces & salsas

-Appearance of food from kitchen

-Desserts

-Bread & rolls

-Coffee fresh – pot stays fresh for approx. 20 minutes – don’t over brew

Inventory control

1. Food & supplies

-Call in or prepare any orders for the day

-Prep & stored properly

-Rotated properly

-Item inventories as specified

- i.e., silverware, ramekins

2. Breakage

-minimize careless handling on breakables

Theft control

1. Be aware & trust few as applies to cash, food & supplies

3. Must be able to spend 10% of working time sitting.

4. Will be required to use all sensory capabilities such as: vision, hearing, tasting, smelling, touching, and speaking.

5. Will be required to use physical capabilities such as: walking, bending, kneeling, handling, hand flexibility, reaching, squatting, crawling, lifting, climbing, and stooping.

6. Must be able to carry loads greater than 35 pounds and be able to transport up to 70 pounds regularly.

7. Must be able to communicate clearly with our Guests in the primary language of the restaurant, specific to location. (Primarily English).

8. Must be able to hear with 100% accuracy with correction.

9. Must be able to see to 20/20 vision with correction.

10. Travel may be required for occasional deliveries, visits to other locations, or company meetings.
