We currently have a great opportunity for a Sous Chef / Kitchen Manager role.
Essential Duties and Requirements:
- Serve-Safe® Food Handlers Certificate.
- Prepares salads, garnishes, appetizers, dressings, cookies, desserts, etc. as directed.
- Assists the Line and/or the general Manager in preparing food items as directed.
- Assists the Line with supervising/training.
- You will maintain compliance with Nassau County Department of Health, S.L.A., O.S.H.A., and all other relevant governing bodies.
- You will be responsible for compliance oversight and instructing/correcting all staff members when necessary.
- You will be responsible for all cleaning procedures, protocols, and schedules for BOH.
- You will be able to work with Garde Manger, Sautee, and Grill.
- You will stay up-to-date on food safety and food quality best practices.
- You will be able to make the pizza dough fresh daily, from scratch.
- You will maintain all cold and dry storage in a neat, clean, and organized manner.
- You will be responsible for keeping all recipes/preparations (complete with measurements, instructions, and images) up to date with physical copies in each station with relevant items for that station.
Success in this role will be demonstrated by working intelligently and efficiently. It is essential that compliance oversight is your primary task. To meet the restaurant’s standards, you must be able to manage and motivate people to get the job done.
